Butterbean’s Cafe Heart Lemonade and Strawberry Ladybugs

Yield: 1 Pitcher Lemonade and 8 ladybugs
Active Time: 30 minutes
Total Time: 2 ½ hours

Ingredients:
For Lemonade:
1 ½ cups superfine sugar
2 cups water
½ cup strawberries
½ cup cranberries
½ cup raspberries
3 lemon slices
3 cups fresh lemon juice
2 ½ cups filtered water, chilled

For the ice cubes:
2 cups cranberry cocktail juice

For the Strawberry Ladybugs:
4 large strawberries, stems removed, halved
½ cup chocolate, melted
Parchment piping bag

Method:
For the lemonade:
In a medium saucepan over medium heat bring water, sugar, strawberries, cranberries and raspberries to a boil. Reduce heat to low and simmer for 2 minutes. Turn off heat and add lemon slices. Set aside to cool.

For the ice cubes:
Pour the cranberry cocktail into heart shaped ice cube molds. Allow to freeze completely.

Pour cooled syrup mixture through a sieve into a pitcher. Add lemon juice and filtered water and stir to combine. Add ice cubes and serve immediately.

For the Strawberry Ladybugs:
Place the melted chocolate into a small bowl. Dip the pointed end of the strawberry into the melted chocolate to create a ladybug “face”. Repeat with remaining strawberries. Set aside.

Pour remaining chocolate into a piping bag and pipe each strawberry with chocolate polka dots. Set aside to cool and serve once chocolate has set.
